The IIR has just released on its website two new summary documents on ice cream manufacturing. The documents were revised by Antonina Tvorogova, member of the C2 commission on “Food science & engineering”, and by Pr Adisa Azapagic and Dr Laurence Stamford from the university of Manchester.
